For a duelist that excels in combat with little to no armor, adjust the character's AC and weight carried (and starting wealth if your making new characters) as if the character was wearing said armor. The character won't be able to carry as much as other characters and will be more easily slowed by encumbrance, but will have a constantly good AC.
If this seems too powerful, you can remove the AC bonus if the character is surprised, restrained, or otherwise unable to fully make use of his or her quick reflexes.
